After months of being single especially in pandemic is almost like being stranded on the top of a mountain all alone. You can very well see things from there, but can’t move out, because if you do, it’s dangerous.

So, long months of boredom and patients have got you a date for yourself and finally the day as come you invite them over, but…. Are you just going to call them over and do nothing special?

Date Night Pasta Carbonara –
If you have an evening date and it’s almost time for dinner, with a glass of wine, this cheesy spaghetti pasta dish and set the mood right for the rest of the evening.
A quick and easy recipe that is perfectly portioned for two.
⦁ Olive oil
⦁ Garlic, crushed with skin on
⦁ Day-old bread that is ripped into pieces
⦁ 1 large egg plus 3 large egg yolks
⦁ Black pepper
⦁ Chicken/paneer (you can also use thick-cut bacon)
⦁ Thyme, for garnish (completely optional)
⦁ Medium heat a saucepan and add in 1 tablespoon of olive oil and 2 cloves of crushed garlic (skins still on). Saute for 1 minute, then add in baguette pieces, tossing to coat. Cook until golden brown, then remove from heat and allow to cool slightly.
⦁ Get a large mixing bowl, mix egg, egg yolks, cheese, and black pepper. Stir it well, then place it aside.
⦁ Boil water in a large pot, then add Agastya Pasta in it. Cook until al-dente, approximately 8-minutes. Reserve ½ cup of the pasta water for later on.
⦁ Meanwhile, dice the meat/paneer into ½ inch thick pieces. Cook in a large saute pan over medium heat.
⦁ Once Agastya Pasta is al-dente, remove pasta from boiling water and place into the meat/paneer pan. Stir the pasta around to soak up all the drippings.
⦁ Spoon a few tablespoons of reserved pasta water into the egg mixture, whisking the entire time. Then transfer it all into the egg bowl, stirring to combine.
⦁ Transfer everything back into your large saute pan, add in the remaining ½ cup of pasta water, and cook over low heat for about 3 minutes, stirring constantly. The spaghetti pasta will be done once it thickens up and has a creamy consistency!
⦁ To serve, place on two plates and top with breadcrumbs and thyme.

The Romantic One Pot Pasta Diavolo
This Agastya Pasta dish is a perfect main course for a date night or any night of the week.
Cook and they will love every bite of it.
⦁ Olive oil
⦁ Red pepper flakes
⦁ Diced tomatoes, drained
⦁ Coconut milk
⦁ Sea salt
⦁ Black pepper
⦁ Agastya pasta (Spaghetti/Penne/Fusilli)
⦁ Heat olive oil on medium heat and add minced garlic and red pepper flakes in a deep pot. Saute 2 minutes until fragrant.
⦁ Add in tomatoes, coconut milk, and water. Add salt and pepper and stir to combine.
⦁ Blend the sauce in the pot for about 1 minute.
⦁ Bring the sauce to a boil and add Agastya pasta. Cook until pasta is al dente, about 10 minutes.
⦁ Serve and garnish with fresh basil.

If you don’t like spicy food – reduce the number of red pepper flakes or eliminate them. The dish will still be delicious!
